Quick Bite: Sally Torres Vega

How absolutely adorable are these garments. They look so comfortable.  Modern yet timeless (is that an oxymoron?)

I love discovering new designers, especially from my gorgeous Puerto Rico. You can check out her website here.

Quick Bite: Mexican Pizza

One of the greatest blessings I received this year was that my office moved literally 5 minutes from my house.  As an advantage, I sometimes go home during lunch and eat in peace, and also save money.  The other day, I had forgotten to bring food to work but really didn't have much in the apartment.  I decided to go home to scour the fridge and think of something to make.  I remembered I had some leftover fresh deli meat from a few days ago and cheese.  So, I made a healthy version of a "Mexican pizza". No servi-carro trip to Taco Bell required (I wish).

Healthy Mexican Pizza Recipe:

- Two corn tortillas
- Slices of turkey breast
- Mexican blend shredded cheese (low fat)
- Bean medley
- 3 chopped cherry tomatoes
- Alfalfa Sprouts
- Salsa

Assemble the Mexican pizza by creating a "sandwich" from the turkey, cheese and two tortillas.  Heat olive oil in a pan. Place the tortilla "sandwich" and cook in each side until crispy and cheese is melted.  Move to a plate.  Top with beans, tomatoes, alfalfa and a dollop of salsa.

Quick Bite: Easy Almond-Crusted Trout (w/ Herbed-Garlic Butter)

This is the perfect food to make on a Friday after work when you are tired, want to save money, be healthy but still enjoy your wine (pre-game?).
All you need is fresh trout, crushed almond, one minced garlic, butter and dried French herbs.

Recipe:
1. In a cup, whip up 1 tbsp of butter, herbs, salt, pepper and a bit of olive oil
2. Brush the trout on both sides and cover it with the almonds.  You will need to put them in shallow plate before. Just press the trout against the almonds.
3. Line the baking sheet with either wax paper or almond.  Place fish and bake for 10 mins (make sure the oven is pre-heated at 350 degrees).
4. Enjoy the wine :)

Quick Bite: Teaspoon Bake Shop

I honestly don't get why people are obsessed with Magnolia cupcakes.  These are much much better.  You just have to go to Queens to find them.  I know, that's like saying you'll have to drive to Tennessee.
